Chef José Luis Sánchez Ronquillo
With a continuous trajectory for almost 20 years, he is a proud graduate of the Centro Culinario Ambrosía, always grateful to its founder, Guillermo Ríos Gamboa, who gave him the great opportunity to train professionally in the exciting world of cooking.
He has taken specialty courses in Mexican cuisine, vacuum cooking, pastry with Oriol Balaguer and Stepháne Glacier, among others. In his extensive career, his time in Europe stands out: Martín Berasategui, an establishment with three Michelin stars, and Bodegón Alejandro, with one Michelin star, in San Sebastián. In these tables he learned about dedication, technique and product, as well as the philosophy within a kitchen that seeks perfection.
Today he is positioned as executive chef of The Palm Mexico City restaurant, at Presidente InterContinental Mexico City hotel, where he seeks not only to impart knowledge but also to continue his training, learning from each and every one of the expert hands of those who they work there.

ChiquiClub is our activity program for children from 4 to 12 years old where they can play, draw, watch children's movies and do crafts, among others; all under the supervision of qualified personnel to care for and entertain the little ones in the house, since their safety is our priority. In addition, we have a children's buffet inside the ChiquiClub.
