With a career spanning nearly 20 years, José Luis Sánchez Ronquillo is a proud graduate of the Ambrosía Culinary Center. He remains grateful to its founder, Guillermo Ríos Gamboa, who gave him the opportunity to train professionally in the exciting world of cuisine.
He has completed specialized courses in Mexican cuisine, sous-vide cooking, and pastry arts with renowned chefs such as Oriol Balaguer and Stéphane Glacier. His impressive career includes time in Europe at Martín Berasategui, a three-Michelin-starred restaurant, and Bodegón Alejandro, with one Michelin star, both in San Sebastián. There, he learned the importance of dedication, technique, and high-quality ingredients, as well as the pursuit of perfection that defines a world-class kitchen.
Today, he leads as Executive Chef of The Palm restaurant Mexico, located at Presidente InterContinental. Here, he not only shares his knowledge but also continues learning from the expert hands of the team behind our renowned steakhouse.
We offer a fun and safe activity program for children ages 4 to 12, where they can play, draw, watch kids’ movies, and enjoy arts and crafts—all under the supervision of qualified staff dedicated to keeping our youngest guests entertained and protected, as their safety is our top priority. At The Palm CDMX, our steakhouse also features a special kids’ buffet as part of the ChiquiClub experience.
